Banana Espresso Coffee Cake
The coronavirus pandemic brought out some of the best hidden home chefs, which is why trends like the Dalgona Coffee spread like wildfire. And if Dalgona was the official beverage of the lockdown, a sweet and delicious home-made loaf of Banana bread took the title of being the official snack.
Everyone loved the idea of Banana Bread as it had a very homely and comforting appeal to it, and the recipe was pretty simple. We fell in love with it too, which is why we took it as an inspiration and turned this snack into a dessert by giving it a delish caffeinated makeover.
It turned out pretty good and once you take a bite; you just won't get enough of this moist and delicious Banana Espresso Cake.
You will need a few basic ingredients to get you started. Your Coffeeza Finero Next Machine and Cremoso Capsules are the heroes of this dessert.
- 3/4 cup Flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon powder
- 2 very ripe bananas
- 3/8 cup sugar
- 1/6 cup vegetable oil
- 1/4 cup yogurt
- 40 ml espresso shot (Coffeeza Cremoso Blend)
Start with brewing 2 shots of espresso using our Cremoso blend. Preheat the oven at 180 degrees. Next, take a bowl, add the all-purpose flour, then baking soda, salt and cinnamon and mix it all.
In another bowl add the ripe bananas and mash them, followed by adding yogurt, the espresso shots, vegetable oil and sugar. Add the dry ingredient mixture from the first bowl into this one and mix well. Add the mixture to a baking bread/cake mould and bake it at 180 degrees for 30-35 mins or till a toothpick inserted comes out clean!
Let it cool, slice it nicely and enjoy with another cup of coffee
